To ensure the pudding is ready by breakfast time, begin preparing this dish the evening before. combine the almond milk, 1 tbsp agave syrup or honey, vanilla extract, and chia seeds in a bowl (one with a lid is nice).
Stir these ingredients together every 4-5 minutes for about 30 minutes. This keeps the ingredients from getting too clumpy.
Cover the bowl and chill in the refrigerator overnight, or for about 7-8 hours to allow it to thicken.
Purée and toppings
The morning after preparation, take the bowl out of the fridge and uncover. Put the blueberries in a blender with the 1 teaspoon of agave syrup or honey. Blend until smooth.
Pour the blueberry purée on top of your chia pudding, then top with any blueberries you have left.
