Fresh Blueberry Chia Pudding

Instructions
Preparing the pudding
  1. To ensure the pudding is ready by breakfast time, begin preparing this dish the evening before. combine the almond milk, 1 tbsp agave syrup or honey, vanilla extract, and chia seeds in a bowl (one with a lid is nice).
  2. Stir these ingredients together every 4-5 minutes for about 30 minutes. This keeps the ingredients from getting too clumpy.
  3. Cover the bowl and chill in the refrigerator overnight, or for about 7-8 hours to allow it to thicken.
Purée and toppings
  1. The morning after preparation, take the bowl out of the fridge and uncover. Put the blueberries in a blender with the 1 teaspoon of agave syrup or honey. Blend until smooth.
  2. Pour the blueberry purée on top of your chia pudding, then top with any blueberries you have left.
  3. Make sure to snap a photo of your super cool creation before mixing and eating! 🙂
