Fresh Blueberry Chia Pudding

Hi all! So, I’ve been plant-based/vegan for over 8 months now. But I’m only just now hearing about chia pudding! Where has this awesome stuff been all my life??

I follow plenty of vegan Instagram pages that post insanely gorgeous food photos, and one of the coolest dishes I see posted on there is chia pudding. Something about the way the seeds make the pudding look all bubbly is super cool to me! I could never figure out what it was or how to make it, but I recently got myself a fantastic recipe book at Barnes & Noble that showed how to make it!

I decided to go ahead and share my modified/simplified version of the recipe from the book, but I definitely recommend the book (listed in the recipe below) if you can get your hands on it!

My version of the recipe isn’t too different, it just notes the flexibility of ingredient measurements and gives recommendations for preparation.

I will definitely say that if you’re a person who has issues with food textures like I do, this dish might throw you off at first. It took me a bit to get used to so I ate it pretty slowly, but I just loved how fresh and healthy it tasted so I kept eating until I got used to it!

The best part about this dish is that the main part can be prepared the evening before, so breakfast is ready and waiting for you when you wake up! I love that!

Instructions
Preparing the pudding
  1. To ensure the pudding is ready by breakfast time, begin preparing this dish the evening before. combine the almond milk, 1 tbsp agave syrup or honey, vanilla extract, and chia seeds in a bowl (one with a lid is nice).
  2. Stir these ingredients together every 4-5 minutes for about 30 minutes. This keeps the ingredients from getting too clumpy.
  3. Cover the bowl and chill in the refrigerator overnight, or for about 7-8 hours to allow it to thicken.
Purée and toppings
  1. The morning after preparation, take the bowl out of the fridge and uncover. Put the blueberries in a blender with the 1 teaspoon of agave syrup or honey. Blend until smooth.
  2. Pour the blueberry purée on top of your chia pudding, then top with any blueberries you have left.
  3. Make sure to snap a photo of your super cool creation before mixing and eating! 🙂
